Key principles:
Braising converts tough, collagen-rich cuts (chuck, short ribs, shanks, brisket) into tender, rich dishes through extended low-heat moist cooking.
The mechanism: Collagen in connective tissue hydrolyzes into gelatin at 160–180°F sustained for 2–4 hours. The gelatin dissolves into the braising liquid, creating body and richness. Muscle fibers relax at sustained 200–210°F (a 325°F oven produces 200–210°F internal temp in a covered Dutch oven).
The setup:
Visual cues: Done when a fork pierces with no resistance and the meat pulls apart with gentle pressure. Braising liquid should be glossy and coat a spoon.

Chicken stock basics:
For bone broth: extend the simmer to 12–24 hours and add a splash of apple cider vinegar to help extract minerals from the bones. A properly made bone broth gels firmly in the refrigerator — that gelatin is the goal.

Rendering tallow from beef fat:
Properly rendered tallow is white or ivory, firm at room temperature, and has a clean beefy smell. Overheated tallow turns yellow and develops an off flavor.
Making ghee from butter:
Ghee is clarified butter with milk solids removed — higher smoke point than butter, longer shelf life, same rich flavor.

Signs of healthy fermentation: Bubbling, a pleasantly sour smell, and cloudy brine. Signs of failure: Pink or black surface growth, slimy texture, or unpleasant off odors beyond normal sourness.
The Maillard reaction is the most important flavor-developing process in savory cooking. It is distinct from caramelization (which involves only sugar browning).
What it is: A cascade of chemical reactions between amino acids (from proteins) and reducing sugars that occurs above ~280°F. It produces hundreds of new flavor compounds and the characteristic brown color on seared meat, bread crust, and roasted coffee.
Why it requires dry surfaces: Water boils at 212°F, which means a wet surface cannot reach the 280°F threshold needed for Maillard reactions. Drying meat before searing, and baking bread uncovered for the final portion of baking time, are both applications of this principle.
Fond (the brown residue on a pan bottom after searing) is concentrated Maillard reaction products — pure flavor that dissolves into liquid when you deglaze.
